Mushroom fry

This is a very simple, yet delicious recipe. It is also very healthy as it doesn't need too much oil for frying and can be served as a side dish.

Ingredients:
  • 2 tbsp finely chopped spring onions (green onions or scallion)
  • 3 tbsp olive oil
  • 1/2 tsp mustard seeds
  • 1 tsp flaked, dry almonds
  • 1/2 tsp cashew finely chopped (optional)
  • 1 piece fresh garlic
  • 1 small green chillie
  • 1 yellow chopped onion
  • 1 cup mushroom
  • 2 tbsp tomato puree
  • Salt to taste
  • 3 tbsp Besan powder
  • 2 tsp corn flour powder 

Cooking time: 
15 minutes

Method:
Add 1 tsp oil, mustard seeds. Once the mustard seeds start splitting, add almond and cashews. once they are light brown, add garlic, green chillies wait for a minute.
Add chopped onions, wait till very light brown. 
Add mushroom, chopped into large or fine pieces.

Add salt, tomato puree, wait couple of minutes. 
Add dry besan and corn flour powder and mix well. Add the remaining olive oil and fry nicely.

Can be garnished with spring onions and coriander leaves.
